S'more Cookie Recipe

Happy New Years Eve!!
When I was pregnant with Kayden... well lets face it even after I was pregnant with Kayden I've craved S'mores, I love them they are so yummy it's the perfect snack for the winter & summers. These cookies I've baked have satisfied my S'more cravings so I decided to share them with all of you & who knows maybe you can make them for a party tonight!


  • 11 Tablespoons unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs 
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 teaspoon cinnamon
  • 2 ½ cups flour 
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 3 Hershey’s bars, broken into pieces {I used the larger bars}
  • 1-2 packages graham crackers {I used a box that already had them pre-squared & Honey flavor}


  1. In the electric mixer bowl add softened butter with the white & brown sugar, mix until fluffy. Add eggs, vanilla extract & mix until combined.
  2. In a medium bowl, mix together the flour, baking soda, salt & cinnamon.
  3. Then add the flour mixture to step one & combine on low speed.
  4. Fold in the chocolate chips and marshmallows.
  5. Preheat the oven to 375 degrees. Line baking pans with parchment paper. {I had to use foil it cooked just fine.} I used a large cookie sheet but you can really use which ever size you want. 
  6. Lay out graham crackers side by side on the pans as close as possible {they should be touching} You may have to add or remove graham crackers depending on how much dough you have. We had some dough left over since so many crackers were broken in the package. 
  7. Place tablespoons of dough on graham crackers about 1 – 1 ½ inches apart. Press down slightly with fingertips. 
  8. Bake for 5 minutes then remove from oven to press Hershey’s bar pieces on to the top. 
  9. Bake for an additional 7 minutes or more until the edges a slightly golden brown. Move to a cooling rack. {I didn't the first & they stuck on the foil.}

Top 13 of 2013

2013 has come & gone but as always I like to reflect on my favorite moments that happened this year. It wasn't hard to think of 13 wonderful things that happened, so here they are in NO particular order...

Kayden turned ONE!! I can't believe my baby turned one already, his first year really flew by & we are only 6 months away from his second birthday. Dear Time, Slow Down!

Avilee was born! Never did I think my best friend since kindergarten would have a little baby girl 6 months after me. I love this little girl to pieces & I'm so happy to see her grow up with Kayden as her protector & who knows maybe even her future boyfriend

A few short months later Benjamin James was born to my best friend Becca & her husband Victor making their little family of 3 a full family of four. Kayden was then not the not so lonely boy with all the girls. I hope Kayden & Ben are best buds for a lifetime & stay out of trouble together... who am I kidding they are mine & Becca's kids they will get into trouble I hope it clean & fun though.

Kayden met Mickey Mouse! If Kayden could write out his top 13 I'm pretty sure meeting Mickey Mouse would be in there! 

Greg got to race his dream cars. I know this was one of Greg's top moments but it was also one of mine as a girlfriend & wife. I never would have thought I'd be able to do this for him but I'm so happy I did, seeing his face lite up after each race & seeing him talk about it after was an amazing feeling. 

Greg & I went to VEGAS! As our first trip away from Kayden we wet to Vegas & had a great time although we missed him so so much every mama & dada needs a little time alone.

Disneyland or Bust!

You know that vacation feeling linger... The one that kind of feels like you're playing hooky from life's realities? Well I didn't get one I did get a good old case of, "I want to write but I'm sitting here procrastinating cause there is so much I need to do this week" though. So last week I put off blogging & did everything I needed to do around the house I even put the clothes away & didn't make them sit in a pile for two weeks, please tell me I'm not the only one who does this.
Disneyland was so fun! The fact we were going there didn't really hit me till we were actually in the park. This trip I did so differently, I didn't start our packing lists till two days before & I half ass'd planning the trip all together. I didn't want to make a set schedule since I wasn't sure how Kaydens naps would come into play during the day. As my family tradition when we go to Disneyland we left at 3am, bight & early I was exhausted but could hardly sleep in the car. I was so nervous for the car ride, Kayden hates anything to do with the car, riding in it, sitting in his seat, & sleeping in it he just can't stand being in the car.
Our plan was to keep Kayden asleep at the start of the drive which didn't work out, we went in his room to change his diaper & sleek him into the car when he popped right UP as if saying "hi I'm ready to go to Disneyland" he was wide awake so we took him down stairs to which he was very confused cause he saw my parents standing there WAY too early in the morning we hopped right in the car. For a 6 & half hour drive Kayden did pretty well he stayed awake almost the whole time till we got back in the car after breakfast, he woke up at the grapevine & got to see all the snow & got to see his mamas favorite city, I couldn't believe I was laying eyes on it 3 years later I missed it & still did since we didn't stop, as my dad like to call it "Los Angeles the land of Palm trees, smog & traffic." Can you tell how much he loves it there? For me it doesn't change a thing.
At that point Kayden was D-O-N-E with the car ride he just wanted to run & not be sitting anymore, I can't blame him cause at that point I was getting claustrophobic & my butt was numb. I was a bit nervous I picked a hotel but didn't even both to see how far or close it was to the actual park, smooth move mom. Never fear that cause it was directly across the street, I scored with location & price. We arrived at the Carousal Inn & Suites in record time the drive there was so much faster than I thought it would be. Since we arrived so early we couldn't check into our room yet so we changed Kayden into some clothes & headed over to the park.

On the first day we jumped on pirates of the Caribbean the moment we got there & thank god we did cause Saturday it was packed & a hour+ wait not worth it with a toddler. We got on & Kayden looked a little confused but sat their patiently looking at everything on the ride he even barked when he saw the dog throughout the ride, I wasn't sure if he'd get scared but he didn't seem to mind the boat fight or the noises & he loved the parrot at the beginning & end of the ride.  After that we headed over to Splash Mountain so my parents could ride it {it's my dad's favorite ride} Kayden loved watching all of the logs fall over & over again he really wanted to go on it which I figured he would since he loves water but he is still too small. We ate some food at the bear diner, every time I eat here I get so upset they got rid of the corn dogs they were my favorite, we enjoyed the great view of Tom Sawyers island & Kayden quacked at the ducks in the water.

Once lunch was over we headed through sleeping beauty's castle & into Fantasy land the line for Mr. Toads Wild Ride was short & moving fast so we jumped at the chance to go on it. I remember not liking in as a kid & being scared of the characters in it, the apple doesn't fall far from the tree Kayden didn't like the ride much either & started to cry mid way. Once we got off he was better cause Kayden saw the Carousal & really wanted to go on so we all hopped onto the Carousal & he loved it, he loved it so much he cried when we got off I could tell he was already starting to get a little tired. My main goal this trip was for Kayden to meet Mickey Mouse so we went over the Toon Town after Fantasy land  to see what the wait was at his house it said 5 minutes BUT was out the door yeah a lot longer than 5mins it was only the first day so it wasn't a huge deal if we didn't catch him Thursday. Our last event before Kaydens nap was Mickey & the Magical Map we just lucked out & caught it while we were on our way out of toon town. Kayden loved the show they had tons of singing & dancing & towards the end BUBBLES... He went nuts my only regret is we weren't directly under the bubbles when they started. He had such a good time watching the show after it he passed right out. So we went & did our shopping at Downtown Disney I had some gifts & ornaments I needed to get for some friends. Nights in Disneyland are so cold so we had to go back to the hotel to check in & change to get ready for cold weather.

At night we ate some dinner then headed back to the park we went straight to the Haunted Mansion it was all decked out in its Nightmare Before Christmas display & we were blown away with how much they change it just for the Holiday season it was like going on a brand new ride. Kayden loved it he was dancing to the music in his seat & was pointing at some of the displays he liked. After that we went on the jungle cruise which was kind of a waste of time our "tour guide" was kinda lame & we couldn't see a thing since it was so dark. We made it off the ride just in time to catch the Fireworks they ALWAYS make me cry & this trip was no exception watching Kayden light up from watching the fireworks was such a great moment it will stay in my memory forever! At the end of the show it snows on main street & I have no clue why I didn't get a photo of this. Once the fireworks were over so were we the park closed early that night which was fine with us we were exhausted from the drive. Sleeping didn't go as planned the first night Kayden didn't want to sleep in his PAC n play so he slept with us that night & had a hard time doing that I'm pretty sure Mr. toads wild ride was the cause of some bad dreams that night.

Every morning Kayden woke up I could see his little brain was thinking "yay we are still here!" And every morning he'd run up to my parents door & knock at it till they opened it. Being right across the street from the park was so nice & the moment we started walking into the gates Kayden would start dancing to the music seeing so much joy in his face from the music was classic & amazing. Our second day was half spent in Disneyland & the other half in California Adventure. This was the last morning we'd really have to meet Mickey Mouse so it was what I wanted accomplished first this day. We saw him the moment we walked into the park but... Mickey needed a potty break his guards said "his tummy is upset." Poor Mickey but not to worry 5 minutes later Mickey was back in business & Greg made a mad dash to the line with Kayden. We were waiting in line for Mickey & pointed him out to Kayden he went NUTS! He loved seeing Mickey & his favorite feature on Mickey is his nose it was so funny, every character Kayden met he just wanted to grab their nose.

Once we finished with Mickey we ate at the awesome bakery called La Brea in Downtown Disney, they have amazing sandwiches. After lunch it was into California adventure the moment we got in Kayden passed out since he didn't sleep well I wasn't surprised. So we shopped in there a little & went on the big bear water rapids once my parents finished that ride Greg & I wanted to go on the Cars ride we got over there but they said it was down for maintenance so we waited around till it was back up thinking it would be the perfect time to get on & it wouldn't be a long wait. The line was WAY too long we waited at least a hour & half to get on thankfully Kayden napped for most of it while my parents watched him, the ideal time to see the ride would probably be while the world of color show is going on. It was a fun ride I really wish Kayden could have gone on it with us, but since he couldn't we went over the Ariel's under the sea ride. I love this ride the little mermaid is one of my favorites & the ride was done perfectly it's brand new but still has the old Disney rides feel to it which brought me to wondering why doesn't Cinderella have her own ride... After some more rides, dinner & taking pictures in front of the castle, my parents took Kayden back to the hotel while Greg & I ordered photos, rode on the Matterhorn & ate beignets at the Jazz Kitchen in downtown Disney we had a great time just us as a little date in Disneyland & now I am OBSESSED with beignets I ate a total of 10 I'm sure over a two night period.

The next morning we woke up & went over to Goofy's Kitchen at the Disneyland hotel, there he met dale from chip n dale, Pluto {again} & of course Goofy. After he ate he had a melt down & was sick of breakfast. That morning I had planned for us to go to California Adventure to see Disney Junior live on stage Kayden seemed to be fine even though he was a little fussy heading in I was hopping he wouldn't mind sitting & waiting for the show to start but in true Kayden fashion he didn't want to sit & he wanted to go on stage which was the one thing you can't do at the show so we didn't get to see it, once we exited stage right Kayden had the biggest melt down in the fake streets of Hollywood he wanted to see the show so bad but it just wasn't possible. I hope next time we go they still have the show so he can actually enjoy it. He passed out once he was down with his melt down & this is when I realized 3 days in Disneyland was just too long for this little guy.

We went to Disneyland again we rode Alice in Wonderland  & then headed over to Splash Mountain so Greg & I could go on it. On Saturday Disneyland was packed you could barely move in there so we headed out of the park for lunch at La Brea for one last meal. 
We were split up from my parents at that point since they wanted to get lunch somewhere else after lunch we made the mistake of going back into the park to try to ride its a small world, I thought since the Christmas parade was going on it would be less likely to be a lo wait but I was oh so wrong it took us 20 minutes to get through the crowds of people waiting for the parade to start & then the wait for its a small world was an hour long which over lapped our plans to catch the same parade at 5:00 so we waited for the crowd to die down & ate some Mickey Mouse ice cream, for Kayden's first time eating ice cream on a stick he did pretty good. At 5 we went back to the park for the Christmas parade with my parents, we met some of the nicest people while waiting & watching the parade everyone loved Kayden & tired to keep him busy while we waited for it to start. Seeing Kayden dance to the music & freak out when he saw all the lights & characters made the trip well worth it.

Our next Disneyland trip won't be for awhile at least till Kayden is 4 or 5 which I'm sure will fly by! But I would do things differently as a kid I didn't care about waiting in the lines & as a grown up I still didn't but as a grown up with a kid I would go in the down time of Disneyland February & I'd also go during the week it's how my parents use to do it & it worked for us then so I'm sure it would still work now, it would mean Kayden would miss some school but I'd always get assignments I would miss before the trip so I could turn them in when I got back so hope on planning to do the same with Kayden when the time comes. It was such a fun trip & I can't wait for us to go back, until next time Disneyland!
